"Miraculin" Makes Sour Foods Taste Sweet

Posted by Mitch Wagner, Dec 7, 2006 02:27 PM

Wired News has a weird story about genetically engineering lettuce to produce a protein called "miraculin." Put some miraculin in your mouth and, after that, you'll think sour food tastes sweet.

Professor James Kalat of North Carolina State University's psychology department describes how he, his wife, and another couple took some miraculin and then started eating all the sour things they could find.

He says: "I remember straight lemon juice as being pretty good. I also tried vinegar and sauerkraut juice. Those did not taste good. The next morning we awakened with ulcers in our mouths, barely able to talk.

Uh, yeah. Sounds like a great product. Where do I buy?
