By default the search engine for Mobile Safari is Google. You can change it and here's how.

Head to Settings >> Safari >> Search Engine. Then tap on Search Engine.

Now choose a new default search engine. Here I'm changing it to Microsoft Bing. Exit out of Settings.

The next time you open Mobile Safari, you'll see your new default search site.
